Post-Op Peanut Butter Cookies

On Wednesday night at 9 o’clock, I got the phone call that every mom dreads. It was my husband, “I’m on my way to the Emergency Room with K. It looks like he broke his thumb.” Of course, things could be way worse, but waiting at home until they finally walked in at 2:30am (my husband’s phone having died about 4 hours prior) was no picnic. The following day’s visit to the orthopod revealed that he would need surgery…and such is life with a lacrosse-playing teenage son.*

Before heading off to surgery on Friday afternoon, it occurred to me that it would be nice to have a treat waiting for the patient when we got home. I needed something easy, fast and peanut-buttery (as peanut butter is his favorite–sending the message that this treat is especially for you). I landed upon these Peanut Butter Cookies on Pinterest and they fit the bill on all accounts. From conception to completion in 30 minutes–no lie!–and delicious, to boot. As a matter of fact, my household “expert on all things baked” declared that these are the hands down, best Peanut Butter Cookies ever. The consistent shape, color, chew, taste…all perfection.

If you have a peanut butter lover in your home, this one’s for you. Hopefully you don’t need the motivation of a broken bone to make them.

*Details of the incident for all you lacrosse fans out there: Opposing defender’s stick came down hard (karate chop-style) on my attack playing son’s gloved hand as he was scooping a ground ball in front of the opponent’s empty net. No it was not an illegal hit, just bad luck. And sadly, no K did not score but he did bravely stand on the sideline until the end of the game.

Thick and Chewy Peanut Butter Cookies

Ingredients
  1. ½ c unsalted butter, softened
  2. ½ c granulated sugar
  3. ½ c brown sugar
  4. ½ c creamy peanut butter
  5. 1 large egg
  6. 1 tsp vanilla
  7. 1½ c flour
  8. 1 tsp baking soda
  9. ½ tsp salt
Instructions
  1. Cream the butter and sugars together in the bowl of a stand mixer using the paddle attachment.
  2. Add the peanut butter, egg, and vanilla. Mix well and scrape the bowl.
  3. Combine the flour, baking soda, and salt. Add to the butter mixture all at once and mix until just incorporated.
  4. Scoop dough onto silicone lined baking sheets.
  5. Bake at 350 degrees for 10 to 12 minutes or until just set.
  6. Allow cookies to cool slightly on the tray before transferring them to a cooling rack.
  7. Store cookies in an airtight container.
Notes
  1. Use a cookie scoop to create evenly sized cookies.
