Bacon-Wrapped Pepperoncini

This post is going to be short and sweet because I am fresh off a red-eye and frankly somewhat delirious.

I spent this past weekend in San Diego, celebrating a friend of 31 years’ 50th birthday–no matter how you do the math, that’s a friendship worthy of celebration. It was a great couple of days that not only caught me up on my buddy’s life but shared a glimpse into his day-to-day, allowing me to spend time with his fabulous twins and meet some special friends and co-workers. When distance and time come between important friendships, reconnecting like this is a gift. It was great to be reminded that the more things change, the more they stay the same and that true friendship is one of those things that holds steadfast. And of course, having the opportunity to bask in the SoCal glow didn’t stink. The general vibe is something I could get used to. 

I could also get used to some quick, easy, crowd-pleasing “recipes” for summer, like these Bacon-Wrapped Pepperoncini. In the same vein as the Bacon Crackers, these tasty treats are clearly addictive and so simple to make with ingredients you could have on hand at any and all times. My friend included them in his party menu of “favorite things” and I can see why. They were gobbled up before I had the chance to take a good picture so I will share with you a mediocre one that doesn’t do these peppers justice. Just trust me and head out to buy a jar (or two) of pepperoncini and a pound (or two) of bacon. The only other things you’ll need are some toothpicks and a grill.

Enjoy being the star at any party and get wrapping and grilling (now I’m thinking “rhymin’ and stealin” a la Beastie Boys–no kidding, I am delirious!). In the meantime, I’m going to crawl into bed. Good day and good night.

Ingredients
  1. 1 jar pepperoncini
  2. 1 lb bacon (regular or thinly sliced)
  3. toothpicks
Instructions
  1. Cut the package of bacon in half (crosswise).
  2. Wrap each halved slice of bacon around a pepper and secure with a toothpick.
  3. Repeat until all of your bacon or peppers are gone.
  4. Preheat grill and once hot, place the peppers on the grate to cook.
  5. Close the lid and check occasionally to turn the peppers if need be and pull from the heat when the bacon is fully cooked.
  6. Let cool slightly before offering up to a crowd of friends.
Notes
  1. Recipe can easily be multiplied to satisfy the masses.
