Cucumber and Avocado Salad

Sorry, the morning got away from me!

This is an incredibly simple salad that is perfect during these transitions months when we’ve grown tired of winter vegetables and are anxiously awaiting the bounty of spring. I stumbled over Obsessively Good Cucumber and Avocado Salad on Smitten Kitchen and there learned that the recipe was originated by Julia Turshen. If you are a follower of Sly Rooster, the fact that Julia is behind a dish of which I am a fan is no surprise.

In this straightforward recipe, the crisp crunch of the cucumber is offset by creamy goodness of the avocado. And there’s not much more than a simple dressing tying the ingredients together. Serve this Cucumber and Avocado Salad as a side or as a salsa of sorts on top of your fish tacos. Whatever you do, give it a shot and you’ll have something green and delicious to whip up on a whim and balance out so many of your meals. Enjoy!

Cucumber and Avocado Salad

Cucumber and Avocado Salad

Ingredients

  • 3/4-1 lb seedless cucumber washed and chopped into chunks
  • 1 scallion thinly sliced
  • 1 large avocado pitted and diced
  • 2 Tbls mayonaise
  • 1/2 lime juiced plus more to taste
  • Salt and hot sauce (we used Sriracha) to taste
  • Chopped cilantro or flat-leaf parsley to garnish

Instructions

  • In a medium bowl, whisk together mayo, lime and seasonings, adjusting levels to taste.
  • Add cucumber, scallion and avocado to the bowl.
  • Gently toss to evenly distribute the dressing and garnish with cilantro or parsley. Serve.
