Whipped Feta Dip

I’m still not over Charleston and continue to think about all of the cute shops we visited, streets we wandered down and restaurants we stopped at for a drink or a bite. There’s something about a girls trip that really fuels the soul and makes you want more. Until I’m able to sneak away again, I’ll be reminiscing through recipe recreation and I just so happen to have another winner for you.

Today’s recipe is for the Whipped Feta Dip for which Butcher & Bee is somewhat known. I found this version on a site called Basil & Bubbly and I think that it is spot on with both the flavor and texture. To set the scene, my friends and I took an Uber to Butcher & Bee from King Street, the main drag. We were somewhat shopped out, ready for lunch and knew that the best places to eat were a bit off the beaten path. When we arrived at Butcher & Bee it was evident that everyone in the know had the same idea and we patiently waited for a picnic table outside in the sun to become available. It’s incredible how a big glass of crisp white wine on a brisk, bright Saturday afternoon can make a wait seem purposeful and frankly, perfect. When we sat down and ordered from our beyond adorable waiter, (yes, we were those “moms gone wild”), the Whipped Feta Dip was on our list of must haves. It arrived, we gobbled it up and proceeded to order a second. The mild, smooth cheese is served with a puddle of delicious, local honey and soft pillowy pita on the side. Tear, swipe, savor, repeat. I could have gone on all day.

Turns out that with a couple of staple ingredients you could make this dip at home in mere minutes and have an appetizer at the ready for any spring occasion. Mark this recipe and make Whipped Feta Dip at your first opportunity. I guarantee that your refrigerator will not be without a container of crumbled feta and a tub of ricotta cheese for the rest of the summer. Any while you’re at it, go ahead and make a small investment in the best local honey you can find because that’s exactly what you want in the center of this creamy delight. Enjoy!

Whipped Feta Dip

Ingredients

  • ½ c ricotta (I used whole milk ricotta)
  • 4 oz feta, crumbled
  • 3 Tbls olive oil
  • ¼ c good quality local honey
  • 1 tsp cracked pepper
  • pinch of Maldeon sea salt
  • 1 Tbls sliced green onions or chives
  • naan or pita bread, for serving

Instructions

  1. Blend the ricotta, feta, and olive oil together in a food processor until smooth.
  2. Spread on a plate, pressing the center down to make a well.
  3. Fill the well with honey.
  4. Top with cracked pepper, a sprinkle of sea salt and green onions.
  5. Serve with pita bread or naan.
