Skillet S’mores

If you’ve been to my house for Book Club or Bunco or basically any event that women use as an excuse to get together for a couple of laughs on a weeknight, then you’ve more than likely been treated to Skillet S’mores. As a matter of fact, if you’re a dedicated Pinterest-comber, you’ve probably stumbled upon various pins of these s’mores that are made in an oven vs. over an open fire.

This dessert is an inside-the-park, grand slam home run no matter when, where or to whom you serve them. Of course, kids go bonkers over Skillet S’mores and I’ve heard grown women curse like truck drivers after they’ve vowed to abstain from dessert and these roll out. This is a perfect Valentine’s Day treat whether you are finishing up a special meal with that special someone or celebrating the holiday as a family affair, which is very much what it’s all about in my house.

With three ingredients and loose cooking instructions this could barely be considered a recipe and you can almost do no wrong. But to give credit where credit is due, the first resource I used for Skillet S’mores, also called Indoor S’mores, was on the blog Dessert for Two. To summarize, you take a large cast iron pan, ceramic pie plate or my new favorite kitchen acquisition–a couple of 6″ two-handled skillets and line the bottom with chocolate chips. I would say maybe “two chips deep.” I use semi-sweet chips but feel free to use milk chocolate or bittersweet–whichever is your favorite. Then cover the chips with a layer of large marshmallows that have been cut in half crosswise (so that they are half their original height). Pop in a 450F oven and bake for about 7-10 minutes. You want to make sure that your oven rack isn’t on the highest setting or the marshmallows will burn before the chocolate melts. And keep an eye on the s’mores as every oven is different. Transfer to a trivet, serve with graham crackers and issue a “Be careful, it’s hot!” warning which will be ignored by all. Watch the Skillet S’mores disappear. Happy Valentine’s Day!

Ingredients
  1. chocolate chips, (I use semi-sweet), to cover the bottom of your skillet
  2. large marshmallows, cut in half crosswise
  3. graham crackers, broken into quarters, for serving
Instructions
  1. Preheat oven to 450F.
  2. Line the bottom of a cast iron skillet with the chocolate chips (about two chips deep).
  3. Place the cut marshmallows neatly over the top of the chocolate chips.
  4. Put the skillet in the oven and bake for 7-10 minutes*, or until the marshmallows turn golden brown.
  5. Serve with graham crackers for scooping.
Notes
  1. *When making for the first time, watch your oven to make sure that the marshmallows don't burn as every oven is different.
  2. Measurements and "number served" depend on the size of your skillet and amount of self-control!
