Lemon Herb Chicken Wings
I’ll admit that I generally find chicken wings somewhat unappealing but well, “Landyn made me do it!”
As I mentioned in my post for Pumpkin Layer Brownies, Landyn is a lifestyle blogger/Instagram influencer (livingwithlandyn.com) to whom I am devoted. There is something about Landyn that makes you believe that the sunglasses she’s wearing are the best, the paint color on her walls is perfect and the food she puts on her table is delicious.
Which leads me to the reason I decided to serve Lemon Herb Chicken Wings when we recently had family come to town for a visit. If Landyn loves them…well, you get the point.
The good news is that everyone else loved them as well, and they were easy to make. The wings marinate in a mixture of lemon, garlic, parsley and rosemary for 24 hours in the fridge before being baked in the oven. I finished up with a flash under the broiler for a bit of color and voila! dinner is served.
If your family enjoys ordering chicken wings at a restaurant, I encourage you to give this healthy riff a try. And as with most chicken recipes, I imagine that this simple marinade would work with other cuts of chicken but I think it was the fact that they were wings that got my kids excited. Enjoy!
Lemon Herb Chicken Wings
Ingredients
- 5 lbs chicken wings
- 1/4 c peeled garlic cloves
- 2 Tbls dried rosemary
- 1/3 c fresh parsley chopped
- 1/3 c freshly squeezed lemon juice
- 1/4 c olive oil
- 1 tsp black pepper
- kosher salt to taste
- caramelized onions and focaccia bread for serving, optional
Instructions
- Place chicken wings in a large nonreactive bowl or roasting pan.
- Whisk remaining ingredients together in a small bowl, season with salt, to taste.
- Pour marinade over wings, tossing to coat.
- Cover wings and refrigerate for 24 hours. Stir occasionally.
- Preheat oven to 475 degrees F.
- Place wings in a baking dish, single layer, skin side up.
- Cook for 25 minutes, turning wings over halfway through cooking process to brown both sides.
- Serve with onions and focaccia, if desired.
