Oven-Baked Greek Halibut
Hello and happy new year! Sorry for this delayed post. I’m actually in Bozeman, Montana visiting my parents and doing some skiing. Those who know Bobby (my dad), know that there would be no time to get on your computer on the morning of a ski day. You’re lucky if you get to brush your teeth. We were at the mountain, boots buckled, helmets on, 40 minutes before the lifts started. There is no other way. Part of the “Go fast or go home” and “To turn is to admit defeat” mantras.
Ironically, the first time that I made this recipe for Oven-Baked Greek Halibut from The Defined Dish I was here in Montana. It was summer and it felt like the perfect fresh meal. Now here we are in January and I will say that this halibut is equally suited for the popular healthy Jan-plan diets. It is a super easy, super flavorful weeknight dish that the whole family will love (even those fish naysayers!). Halibut is a flaky white fish that can be on the pricier side (it’s worth it) but other flaky white fish, such as tilapia, would work as well. Since tilapia is a thinner fish, you would just want to lessen your cooking time by a couple of minutes. The fish should flake easily with a fork when done.
You can serve this fish with rice, couscous, or orzo pasta with pesto which is my preference. A simple green salad rounds out the meal. Enjoy!
Oven-Baked Greek Halibut
Ingredients
- 4 6-8 oz halibut fillets
- 3/4 c quartered grape tomatoes
- 1/4 c torn kalamata olives
- 1 lemon 1/2 thinly sliced, other half juiced
- 1/4 c olive oil
- 2 cloves garlic, minced
- 1 Tbls fresh oregano leaves, loosely chopped or 1 tsp dried
- 1/2 tsp Dijon mustard
- 1 tsp Kosher salt
- 1/2 tsp freshly ground black pepper
- 1/4 c crumbled feta optional
Instructions
- Preheat oven to 375F.
- Place the halibut filets in an oven-safe baking dish. Scatter the tomatoes, olives and lemon slices over and around the fish filets.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, and dijon until well combined. Pour the mixture over the fish. Sprinkle the top of the fish with the kosher salt, pepper and feta cheese (if using).
- Transfer to the oven and bake until the fish is cooked through and flakes easily with a fork, 15 to 20 minutes*, (depending on the size of your halibut filets). Halibut should flake easily with a fork when done.
