Killer Noods
Sorry that I am a day late. Big weekend over in our world, the highlight being Kyle’s graduation from Bucknell. It was a wonderful weekend of celebrations and all the feels. Graduation is an incredible accomplishment, but more than this milestone we are so proud of the way he did college. When Kyle set off four very short years ago, my advice to him was “Say, yes.” I wanted him to be open-minded, try new things, explore relationships with different sorts of people, take a class that piqued an interest. Just do all the things.
Well, seeing Kyle in his cap and gown proudly wearing cords around his neck (was this a thing when we graduated–a cord for each the organizations you belonged to? If so, I had none.) representing his fraternity (brothers for life), rugby (a sport he never played before college and now adores), OEL (the outdoor organization, building on a pre-existing passion), the residential food college (Kyle learned to farm, became quite the cook and most surprisingly, an extraordinarily adventurous eater), the mail room (where he took a job, because he “always wanted to work in a mailroom!”), Ghana (representing his life-changing semester abroad), and I think that I may be missing a cord or two but you get the point. Kyle did college. And so we are proud. As heartbroken as he is to leave Bucknell (and believe me, I get it and my heart hurts for him), we know that he is ready for this next stage which I expect will be filled with adventure. I am excited for his journey to begin.
And now onto the recipe which is dedicated to all the young adults out there because it’s quick, easy, inexpensive and absolutely delicious. Whether this goes into your recipe arsenal or starts it, these Killer Noods are a must! These noodles are THE BOMB! They come together in 15 minutes and deliver ALL the flavor!
I found the recipe on Instagram and took it off an entertaining Reels, so check out the account onlyscrans if you are interested. Otherwise, set a large pot of water to boil and start prepping the ingredients. While the pasta is boiling (any long strands will do), start sautéing in a pan large enough to add the pasta to once it is cooked to al dente. After the noodles are coated in this spicy, yummy sauce from pan to plates it goes. Enjoy!
Killer Noods
Ingredients
- 1 lb long thick pasta I used bucatini. Tagliatelle, Fettuccini, etc. would all work well.
- 2 Tbls neutral oil
- 1 bunch scallions chopped
- 6 cloves garlic finely minced
- 1 inch fresh ginger grated
- 1 Tbls red pepper flakes this will be spicy but you can add more or less, depending on your taste
- 2 Tbls peanut butter
- 1 Tbls sesame seeds
- 3 Tbls soy sauce
- 3 Tbls apple cider vinegar
- 1 big pinch sugar
- handful fresh cilantro chopped
- pinch kosher salt
Instructions
- Set a large pot of water to boil. Cook noodles according to package directions. Reserve 3 ladles of the pasta water.
- Meanwhile, set a large saute pan over medium high heat and when hot, add the cooking oil followed by the scallions. Cook for a minute or so (until fragrant) then add the garlic followed by the ginger.
- Add the chili flakes (remember that these are supposed to be spicy, so dont be shy…you can add up to 2 Tablespoons if you are brave!) and let that all simmer for a minute or so before adding the soy sauce and cider vinegar.
- Add the peanut butter. Stir to combine and then add the sugar, sesame seeds and cilantro.
- To turn this into a smooth sauce, add a couple of ladles of the pasta cooking water (one ladle at a time) until the sauce is emulsified and ready to coat the noodles. Taste before adding a pinch of salt.
- Add the cooked pasta to the saute pan and toss until they are completely covered and ready to be devoured.
