Ingredients
  1. 2 slices of ciabatta bread, toasted
  2. a generous slather of Sweet Pea Spread (see recipe in 4/20/15 post), at room temperature
  3. 2 eggs, poached
  4. best quality olive oil
  5. sprinkle of Maldon sea salt
  6. shake or two of Aleppo pepper flakes
Instructions
  1. Slather each slice of toasted bread with a thick layer of Sweet Pea Spread.
  2. Top with a poached egg.
  3. Drizzle with olive oil, a sprinkle of Maldon sea salt and some Aleppo pepper.
  4. Devour immediately.
