Matthew McConaughey’s Tuna Salad
As I am heading out the door on a cross-country road trip with my oldest, Kyle, what do I have packed in our cooler bag? None other than Matthew McConaughey’s Viral Tuna Salad Sandwich. This is the second time I’ve made his version of tuna salad and let’s just say, lunchtime can’t come soon enough!
I’ve always loved tuna salad and have made many different variations of the years. I’ve gone simple, a la my friend Wendy, with just some celery, white onion and French’s yellow mustard. I go exotic with red onion and Major Grey’s mango chutney. And I’ve forever tried to replicate my favorite which has, among other more typical ingredients, horseradish, chopped cornichons and dried cranberries.
But it’s the boldness and quirkiness of McConaughey’s version that really sets it apart. And the magic that somehow, it actually works! His version of tuna salad is so different, yet familiar, that it’s downright delicious.
So go ahead and give it a try. After the first bite you will catch yourself saying, “Alright, alright, alright.” Enjoy!
Matthew McConaughey’s Tuna Salad
Ingredients
- 2 cans tuna fish drained
- 1 Tbls fresh lemon juice
- 1 Tbls apple cider vinegar
- 1/4 c red onion diced
- 1/4 c dill pickles diced
- 1 green apple diced
- 1/4 c corn kernels
- 1/4 c frozen peas
- 1 c jalapeno potato chips crushed
- 1/2 c light mayo
- 1 Tbls wasabi paste
Instructions
- Combine all of the ingredients in a bowl. Enjoy!
