Crispy Air Fryer Artichoke Hearts
Okay, so I’m not exactly sure what happened yesterday. I woke up at 6am (the daylight saving time effect), popped out of bed, and immediately got to work on my Monday morning To Do’s — of which posting this blog is one. It completely slipped my mind until around 2pm, when I decided that Tuesday morning it would be. This sort of flexibility is part of the empty nest, so I may try posting on different days —bear with me!
I made these Crispy Air Fryer Artichokes for my Book Club last week and they were a hit. It hadn’t even occurred to me, until someone asked, that they are gluten-free. A real bonus for “gluten avoiders” to have a crispy treat. When I went back to the original recipe I noticed that Carmen, the recipe creator and cookbook author behind Every Last Bite, is gluten free and all of her recipes are Grain Free, Gluten Free, and Dairy Free so if this aligns with your diet, definitely visit the site linked above.
As I mentioned, I didn’t choose to make Crispy Air Fryer Artichoke Hearts because of what they didn’t include, but rather because they looked delicious. Healthy but seemingly decadent. I served them with a tasty mayonnaise based dipping sauce that could easily be lightened by replacing some or all of the mayo with plain Greek yogurt. I think that I will go that route next time. My mom suggested adding some grated Parmesan to the sauce which also sounds like a good idea. To be honest, you also can skip the sauce entirely and enjoy the seasoned artichoke hearts plain, as either an hors d’oeuvre or side.
I used the spices suggested in the recipe but as Carmen mentions, you can mix that up. Smoked paprika, powdered garlic and a pinch of cayenne would be nice. Or even some Everything But the Bagel seasoning. You can also swap the Parmesan cheese for bread crumbs if you like a breaded topping. An added bonus of this recipe is that if you keep a couple of cans of artichoke hearts in your pantry, you can make it whenever the whim hits. Enjoy!
PS: I chose to double the recipe below and “fried” the artichokes in two batches.
Crispy Air Fryer Artichoke Hearts
Ingredients
- 1 can whole artichoke hearts in water
- 1 Tbls olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 Tbls cornstarch or arrowroot powder
- 2 Tbls finely grated Parmesan
Dipping Sauce
- 1/2 c mayonnaise
- 2 cloves garlic, minced optional
- 1 Tbls finely chopped fresh basil
- 2 tsp grated lemon zest
- 1 tsp lemon juice
- 1/4 tsp salt
Instructions
- Preheat the air fryer at 400F for 5 minutes.
- While the air fryer is preheating, remove the artichoke hearts from the can and cut in half (they are delicate so make sure you keep the halves intact). Lay two pieces of paper towel on the counter and place the artichoke halves face down on the paper towel to absorb any excess moisture. (I let the artichokes drain for about 30 minutes).
- Add the artichoke hearts to a bowl and drizzle in olive oil. Add in the garlic powder, salt, pepper, and oregano and gently stir to ensure they are well coated in the seasoning.
- Next add the cornstarch or arrowroot powder and stir again to ensure all evenly coated. Finally add in finely grated parmesan and stir one final time.
- Generously spray the preheated air fryer basket with cooking spray. Arrange the artichoke hearts evenly spaced out in the air fryer basket. Depending on the size of your air fryer, you may need to do this step in batches. If there is any excess parmesan from the bottom of the bowl, sprinkle it over the top of the artichokes in the basket. Cook them for 5 minutes, after 5 minutes flip each of the artichokes over and then cook for an additional 5mins.
- While the artichoke hearts are cooking, stir together all of the ingredients for the dipping sauce. Serve the artichoke hearts with the aioli on the side for dipping.
