While the air fryer is preheating, remove the artichoke hearts from the can and cut in half (they are delicate so make sure you keep the halves intact). Lay two pieces of paper towel on the counter and place the artichoke halves face down on the paper towel to absorb any excess moisture. (I let the artichokes drain for about 30 minutes).
Add the artichoke hearts to a bowl and drizzle in olive oil. Add in the garlic powder, salt, pepper, and oregano and gently stir to ensure they are well coated in the seasoning.
Next add the cornstarch or arrowroot powder and stir again to ensure all evenly coated. Finally add in finely grated parmesan and stir one final time.
Generously spray the preheated air fryer basket with cooking spray. Arrange the artichoke hearts evenly spaced out in the air fryer basket. Depending on the size of your air fryer, you may need to do this step in batches. If there is any excess parmesan from the bottom of the bowl, sprinkle it over the top of the artichokes in the basket. Cook them for 5 minutes, after 5 minutes flip each of the artichokes over and then cook for an additional 5mins.
While the artichoke hearts are cooking, stir together all of the ingredients for the dipping sauce. Serve the artichoke hearts with the aioli on the side for dipping.
